Bison Pot Roast

Recipes

What could be better than the aroma, flavor and taste of a hearty traditional pot roast? On those cold Montana winter days we love to braise Big Sky Bison’s 100% pasture raised rich and lightly sweet bison roast with root vegetables, topped with pan gravy and paired with a nice a red wine and crispy French baguette. With bison’s leaner meat we like to pair a Tuscan Sangiovese or fruit-driven Tempranillo from Spain.

Often busy with ranch chores all day, we love to use the Instant Pot for this simple and wholesome recipe. This is Michael’s favorite quick and easy but delicious, savory and healthy roast dinner. Preparation takes 15 minutes and cooking takes around 60 minutes total. Serves 4- 6 hungry ranch hands. The left over juices and gravy are saved and added to Simba’s bison trim pet food (our yellow Labrador retriever) as a special treat!

Part of our daily ritual is to take out Big Sky Bison meat for the next days meals, a three-pound roast takes a couple days to defrost in the refrigerator, so plan ahead.
